(se poate inlocui si cu &lt;span style="font-weight: bold;"&gt;patrunjel&lt;/span&gt;)&lt;/li&gt;&lt;/ul&gt;&lt;span style="font-weight: bold;"&gt;Mod de preparare&lt;/span&gt;&lt;br /&gt;Pentru tofu, se combina intaii untul de arahide, laptele de soia/orez, zeama de lamaie, ghimbirul si usturoiul cu un varf de cutit de sare sau cat este nevoie (dupa gust) in functie de continutul de sare al untului de arahide. Tofu-ul se preseaza bine pentru a-i scoate cat mai multa apa din pori si a-l face mai ferm, apoi se taie in felii de ~1cm grosime, se sareaza putin pe ambele parti si se da prin compozitia din unt de arahide. Se acopera o tava cu folie de aluminiu si se stropeste cu ulei de masline, care apoi se intinde. Tofu-ul se pune atent pe tava si se introduce la cuptor; se coace la 275C pentru 20-25 de minute, dupa care se scoate, feliile de tofu se intorc pe cealalta parte si se ung cu restul compozitiei din unt de arahide si se reintroduc la cuptor pentru inca 20-30 de minute, sau pana incepe sa se inchida la culoare si se obtine consistenta dorita (tofu-ul va iesi mai fraged sau mai uscat in functie de cat timp este lasat la cuptor). Intre timp, se combina ingredientele pentru sos. Feliile de tofu se lasa la racit putin dupa ce au fost scoase din cuptor, si se servesc alaturi de un vas cu sosul, care va fi folosit pentru inmuiat. Ceapa verde se toaca marunt si avocado-ul se taie in cubulete mici [pentru rezultate mai bune, avocado-ul trebuie folosit cind are consistenta de unt lasat la temperatura camerei]. Intr-un castron mare, se combina spanacul cu toate ingredientele in afara de ciuperci, sare si piper; se amesteca bine. Ciupercile se spala cu cat mai putin apa, se taie in felii si se frig pe plita, pe gratar sau intr-o tigaie fara ulei,  doar cu putin piper si sare, 5-8 minute pina incep sa lase zeama si sa se stranga, dupa care se pun imediat deasupra spanacului. Se amesteca din nou pana spanacul incepe sa se "ofileasca" si se serveste impreuna cu paine sau crutoane, langa o supa sau felul II (ajunge pentru 4 persoane). inca din antichitate -- e un aliment extraordinar pentru ca cere doar faina de griu dar poate fi adaptat si folosit in nenumarate feluri. prepararea seitan-ului dupa reteta traditionala pornind de la faina obisnuita nu este ceva usor deoarece-ti ia foarte mult timp sa framinti si apoi sa speli coca, repetat, pina cind ramii doar cu gluten (glutenul fiind nimic mai mult decit proteina din griu). insa daca gasesti faina cu continut ridicat de gluten, poti pregati seitan aproape fara efort, chiar daca nu ai rabdarea unui calugar. :)&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;METODA CLASICA (niste detalii de la cineva mai expert decit mine &lt;a href="http://www.ellenskitchen.com/faqs/rawglut.html"&gt;aici&lt;/a&gt;):&lt;br /&gt;&lt;ul&gt;&lt;li&gt;0. in functie de cit seitan doresti, selectioneaza un volum de &lt;span style="font-weight: bold;"&gt;faina&lt;/span&gt; (cit mai bogata in gluten, ca cea de piine de exemplu) dublu (de ex.: pentru 1 cana de seitan foloseste 2 cani de faina) si aproximativ acelasi volum de &lt;span style="font-weight: bold;"&gt;apa&lt;/span&gt; (1 cana de apa pentru 1 cana de seitan)&lt;/li&gt;&lt;li&gt;1. amesteca bine faina cu apa pentru a obtine o coca destul de ferma dar nu lipicioasa&lt;/li&gt;&lt;li&gt;2. continua sa framinti pina ce coca incepe sa devina elastica, poate lua si 30 de minute&lt;/li&gt;&lt;li&gt;3. lasa sa stea, in apa, cel putin o ora dar chiar si peste noapte&lt;/li&gt;&lt;li&gt;4. limpezeste coca (pentru a elimina amidonul) timp de aproximativ 20 de minute, incepind prin a framinta citeva minute sub apa calda si folosind apa mai rece spre sfirsit&lt;/li&gt;&lt;li&gt;5. repeta pasii 2-4 de mai sus pina ce apa cu care limpezesti coca iese curata si coca devine foarte ferma si elastica&lt;/li&gt;&lt;li&gt;6. inainte de a folosi glutenul mai lasa-l sa stea citeva ore, eventual peste noapte&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;METODA SIMPLA pentru preparat si gatit seitan - &lt;span style="font-size:130%;"&gt;reteta Ilenei&lt;/span&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;intii pune pe foc o oala mare cu apa si adauga legume si mirodenii ca pentru o &lt;span style="font-weight: bold;"&gt;supa de zarzavat&lt;/span&gt; Intr-un castron mai mare, combina ingredientele uscate (primele 5) si amesteca bine. Fa 3 gropite in acest amestec, in care pune uleiul, otetul si esenta de vanilie/rom. Acopera totul cu apa si amesteca rapid numai pina cind devine omogen (nu amesteca excesiv). Daca mai este nevoie, mai adauga citeva linguri de apa asa incit consistenta amestecului sa fie ca un iaurt mai gros. Apoi toarna intr-o tava de 20x30cm sau o marime asemanatoare si tine in cuptor la 175C pentru 30-40 min pina cind se coace complet la mijloc (dar tortul ar trebui sa nu fie prea uscat atunci cind il scoti din cuptor). Blatul se poate taia pe orizontala si umple cu parte din crema/glazura sau lasa intreg si acoperi cu glazura. Se poate adauga glazura imediat sau, preferabil, dupa ce blatul se raceste putin se poate taia un strat foarte subtire de la suprafata si apoi acoperi cu glazura.&lt;br /&gt;&lt;span style="font-style: italic;"&gt;VARIANTA:&lt;/span&gt; pentru un tort "alb" inlocuieste cacaua cu 1 lingura pudra de vanilie si 5 linguri de faina sau nuci pulverizate.&lt;br /&gt;&lt;br /&gt;GLAZURA: Intr-o cratita mica, incalzeste apa sau laptele de soia pe foc mic. Adauga ciocolata amestecind incontinuu pina se topeste complet si omogenizeaza. Ia de pe foc si adauga esenta de vanilie. In timp ce topesti ciocolata poti adauga putin zahar (in functie de ciocolata folosita si gustul personal). Nautul fiind foarte sec, e bine sa-i adaugati mult sos, eventual puteti face un dressing din zeama de lamaie, ulei de masline si o lingura cu apa.&lt;br /&gt;&lt;br /&gt;Pofta buna !&lt;br /&gt;&lt;br /&gt;P.S. Intr-un castron mai mare, cerni impreuna faina, bicarbonatul si praful de copt, apoi adaugi coaja de lamiie/portocala si amesteci bine. Separat, amesteci urmatoarele sase ingrediente cu un robot de bucatarie sau cu un mixer si dupa ce obtii o consistenta omogena adaugi la castronul cu faina si amesteci numai pina se incorporeaza. Daca e necesar, mai adaugi citeva linguri de apa rece ca amestecul sa aiba consistenta unui iaurt gros -- usor de turnat din castron. Pui intr-o tava rotunda de tort sau una dreptunghiulara de marime mijlocie, tapetata, si coci la 175-180C in jur de 35 de minute.&lt;br /&gt;&lt;br /&gt;GLAZURA: Intr-o oala mica incalzesti pe foc mic toate ingredientele in afara de amidon, astepti pina da in clocot dupa care adaugi si amidonul frecat in prealabil cu citeva linguri de apa si continui sa tii pe foc mic pina cind se ingroasa bine. Ciupercile, dupa ce le-ai curatat si spalat in mai multe ape, le toci foarte marunt, cu tot cu picioruse, apoi le inabusi in ulei, eventual adaugand si putina apa, daca nu-si lasa ele destula zeama. Adaugi orezul, ales, spalat si fiert pe jumatate, precum si ceapa tocata, pe care ai fiert-o separat. Lasi pe foc pana se patrund bine toate acestea, amestecand pentru omogenizare. Toci verdeata foarte marunt, jumatate din ea amestecand-o cu compozitia obtinuta mai devreme. Umpli ardeii cu aceasta compozitie si ii pui intr-o cratita unsa cu margarina, turnand peste ei sucul de rosii si presarand restul de verdeata. Pui ulei intr-o tigaie atat cat sa acopere mare parte din suprafata si prajesti tofu intorcind fiecare bucata pe cealalta parte dupa aprox. 5 minute, pentru un total de 7-10 minute sau pina cind tofu se face uniform auriu. Scoti tofu si-l lasi pe o farfurie acoperita cu un servetel absorbant. Combini frunzele de spanac, ceapa verde, mararul si patrunjelul cu putina sare, framinti si lasi sa stea aprox. 15 min. Scurgi si apoi calesti acest amestec impreuna cu usturoiul intr-o lingura de ulei pina cind tot spanacul este "topit" si nu mai lasa apa. Dai focul la mic, farmitezi tofu si adaugi in tigaie la spanacul gatit (si scurs daca e nevoie) cu restul ingredientelor in afara de sare, boia si piper si amesteci bine. Iei de pe foc dupa 2-3 minute, potrivesti de sare, boia si piper, apoi lasi deoparte. Incalzesti cuptorul la 180C. Odata ce foile de placinta sint gata de utilizat, pui primul strat intr-un vas ceramic sau de jena tapetat cu faina, stropesti cu putin ulei si adaugi amestecatura de tofu, peste care pui cel de-al doilea strat de foi, stropesti din nou cu putin ulei si presari deasupra seminte de pin (daca folosesti). Se coace 30-40 min la 180C (sau conform instructiunilor de pe ambalajul foilor de placinta). Când s-a înmuiat, o scoţi, o scurgi şi o dai, caldǎ fiind, prin maşina cu sitǎ deasǎ. Dai prin maşina şi miezul de pâine, înmuiat în apǎ rece şi stors în prealabil. Cureţi ceapa, o speli şi o toci mǎrunt, apoi o cǎleşti în uleiul încins, dupǎ care o amesteci cu piureul de linte, miezul de pâine, sare, piper şi verdeaţǎ.
